so the rueda is to churros as latte art is to the barista. as a 180 is to a snowboarder. it’s the thing that takes practice to make perfect, or even to make at all.
this morning i called my mom giddy as a school girl. “mom! i made my first rueda!!"
after days of practice at the small churro shop in seville with my mentor, paco, i made a rueda without burning it or myself.
individual churros are like fries, they are easy to make and flip with a basket. but the rueda is an art form and i finally at least started with a brush stroke. i’m thrilled!
